Shamsher's Special Chowmein

What do you do when your own people don't give a shit about you?

You cook the best damn meal, eat it and stop feeling sorry for yourself.



There is a time in every man's life when he wants to do something special.

So, I decided to make my very own Special Chowmein because I love Chinese food and Jackie Chan movies.


Ingredients


100 grams boneless beef


100 grams boneless chicken


100 grams prawns


Cook the beef for 30 minutes in a pressure cooker otherwise it won't get tender properly and will be chewy.


Marinate the chicken with a pinch of salt, pepper and 1/2 teaspoon sesame oil. Keep it aside and don't look at it.


Vegetables are pretty much up to your choice. Here is what I got.

1 carrot


1 onion


Half a cabbage


Can of sliced mushrooms


The rest of the ingredients are

400 grams boiled Chinese egg noodle

1 tablespoon ginger garlic paste


1 tablespoon oyster sauce


1 tablespoon vinegar

2 tablespoon soy sauce


1 teaspoon salt


1 teaspoon black pepper


1/4 cup chicken stock


2 tbsp oil


1 tablespoon sesame oil 






Add oil in a pan or skillet or a wok. Add  ginger garlic paste with the cooked beef and stir fry for 3-4 minutes.




Add the boneless chicken. Cook till the chicken is tender and then add the prawns.



Stir fry for 2-3 mins and then add the chicken stock, soy sauce, vinegar and the oyster sauce.


Now time to enter the vegetables. The hardest ones go in first. Which makes carrots and shrooms.



Now goes in the onions and cabbage. 

Add salt, pepper and sesame seeds(optional) with a tablespoon of sesame oil.




Stir fry for a minute again and then add the noodles and chopped sprin onions.

MIX MIX

Chowmein is ready to serve.




Special Chowmein is ready. Really easy to make. Kinda hard to decorate but oh well. Put some sesame oil as seasoning to the chowmein and enjoy.

Chicken Cheese Handi

After today you'll not only know me as a man who is handsome and sexy but also someone who taught you how to make Chicken Cheese Handi.

There are 2 phases of Chicken Cheese Handi.

1. Preparing the base gravy.

2. Cooking the chicken in the base curry.

Ingredients for Base Curry:

1 big onion cut into four pieces

1 big tomato cut into four pieces

4 tablespoon yogurt

3 tablespoon oil

1 teaspoon red chili powder

1/2 teaspoon turmeric



Add 1 cup water in a pan along sliced onion and tomato. 

Add the yogurt and spices. 

Add the oil as well and boil it on high heat until the water is almost dried.





Set this base gravy aside. Let it cool down and then grind it.


Today was a bad day.

First a stray cat took away like 500 grams of my boneless chicken.

Then there was no gas pressure.


Then I broke a nice bowl in which I used to present food. 

Not my day at all.

Now comes the 2nd phase for which you need

Ingredients for Chicken Curry:

1 kilogram boneless chicken cubes

3 bullet green chilies sliced from the middle

1 tomato finely chopped

1 teaspoon salt

1 teaspoon dry roasted crushed cumin

1/2 teaspoon garam masala

4 tablespoon cream

1 tablespoon soy sauce

1 tablespoon chili sauce

250 grams of grated cheese of your choice

1 tablespoon garlic paste

1 tablespoon butter

1/4 cup oil 

Handful of chopped coriander which is totally optional



Heat oil in a pan and add garlic paste. Stir it for 10 seconds and add the chopped tomatoes.


Add the base gravy and boil the mixture until the oil floats. Then add salt, garam masala, cumin, soy and chili sauce.



Mix it well and after cooking for 2 minutes add the chicken and bring the heat to medium from high.


If you want to cook the chicken fast then you can lower the heat and put a lid on it. 4 minutes with the lid will do.

Remove the lid and add butter, cream, cheese chili and coriander. Mix I well.



Bring the heat on low flame and cover cook it for exact 5 minutes.

Remove the lid and if the oil is floating above then your Chicken Cheese Handi is ready. Time to dish out.

Almond Chicken


Nihao, I'm Chef Shamsher. Just kidding, I'm just a man who cooks on the weekends.

Sometimes I wish there was a Chinese dish with ingredients like some of my relatives because I sure want to chop and stir fry them these days.

It's that time of the week when I make your life easier by telling you how to cook a certain thing you dummies.



This is Almond Chicken made from scratch with some vegetable fried rice that I have already told you how to make.


You need:

500 grams boneless chicken 1 inch cube cut

1 tablespoon ginger garlic paste

2 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon cornflour mixed in half a cup of cold water

1 cup chicken stock

150 grams roasted almond


Vegetables of your own choice but here I choose:

1 cube cut carrot

1 cube cut onion

2 diced spring onions

A can of sliced mushrooms

150 grams of boiled peas



Now on high heat put a tbsp of oil in pan.

Add the chicken, ginger garlic paste and stir fry it for 2-4 minutes. Then season it with salt and pepper. Half a teaspoon would be enough.




Add the carrots and mushroom and stir for 2 more minutes. Then add the peas. Remember,  hardest vegetable is always first one to fry. Repeat after me, THE HARDEST VEGETABLE IS ALWAYS THE FIRST ONE TO FRY.


Add the soy sauce, oyster sauce and almonds.

Stir and mix till every thing is coated properly.


Add the chicken stock and the onions. Bring to a boil. Cook for 2 more minutes.


Now it's time to thick the sauce by mixing the flour in a half cup of cold water and putting it in the boiling pan. Add the roasted almonds after words.


Taste the sauce. Adjust salt or thickness. It's ready now. 


Eat it with boiled white rice, vegetable fried rice or any kind of rice and noodles. YOU WILL LOVE IT. Almond Chicken is mild not spicy at all but if you want to add some spice to it by all means use 1 or 2 tablespoon of chili sauce, peri peri sauce or sriracha sauce.
