Shrimp Fried Rice

My love for shrimps is directly proportional to the hate I have for humans. HATE HATE HATE!!!

Its the second month of the fish season and I have yet to start my fish recipes for this year as I did last year but I have two recipes to share. One of them is Shrimp Fried Rice and the second one is Shrimp Coconut Curry which I will share later on.

Shrimp Fried Rice is my favorite type of fried rice after Thai Fried Rice which is pretty much the same with more spices but I am sure no one cares about what is my favorite type of rice.

Ingredients:

500 grams of shrimp shelled and deveined

1 1/2 cups of uncooked rice

1 carrot fine chopped

1/2 shredded cabbage

250 grams of boiled peas

3 green onions green part finely chopped

4 eggs

1 tablespoon flour

4 tablespoon soy sauce

2 tablespoon fish sauce

2 teaspoon salt (one for shrimp marinade + one for vegetables saute)

2 tablespoon black pepper (one for shrimp marinade + one for vegetables saute)








Boil your rice and cook them 90%. Drain the water out of them and set them aside to cool down.

Add salt, pepper and cornflour to the shrimps and mix.








In a non stick pan add 2 tablespoons oil and fry shrimps until they are cooked completely i.e pink and white. If you over cook them they will get hard and chewy.






Take the shrimps out in a separate plate.

Now add 4 tablespoons of oil in a non stick pan. Add four pinches of each salt and pepper in the egg batter and fry the eggs. Scramble the egg and take it out in a separate plate.







Now in a non stick pan add 3 tablespoons of oil and saute the vegetables starting from carrots, then add peas and then add cabbage with green onions.

Add salt, pepper and I made it a bit spicy by adding a teaspoon of red chili paste but you can also add chili garlic sauce if you want to spice up. (Spicing it up is totally optional) 








Now add the cooked rice to the pan.

Drizzle the soy sauce and fish sauce on the rice.

Add cooked shrimps and scrambled egg on it and mix the rice well. Lower the heat and stir it well, so all the ingredients are properly infused and mixed with each other.

Shrimp Fried Rice are ready.







If you want to eat it without any gravy then that's a choice as well but you would love it with Manchurian, Kung Pao and other recipes like that.

Ladies and gentlemen, say "HIP HIP HURRAH" for Shrimp Fried Rice.
