Singaporean Fried Black Pepper Crabs

Crabs, I don't know them and they definitely do not know me. The reason is maybe I never went to Karachi or never to a proper sea food restaurant. 

I am ghareeb aka poor. It's hard to dine out. I'm just messing I prefer to cook and take it as a challenge in fact.

I was always fascinated from crabs and lobsters so I thought I should finally give them a try and see where it goes. 

TO BE VERY HONEST till the end of this recipe I did not even know how to eat them but this is my very first attempt to crabs. As most of the dishes I have made and uploaded here are just experiments.


Take a good look at this face because this face is about to make Singaporean Fried Black Pepper Crabs.

You need:

4 blue crabs

125 ml chicken stock

5 cm ginger cut in thin slices


4 garlic cloves crushed

60 ml soy sauce

60 ml oyster sauce

80 grams butter

Half bunch green onions

2 tablespoon sugar


Few thin sliced red chilies 

A tbsp of coriander leaves

Lightly crushed black pepper corns about 30 grams


& I don't even know how to eat crabs. LOLOLOLOLOL

Heat 250 ml of oil in a pan on around 180°C. Cook crabs on both sides two minutes each. Cook them like it's your ex girlfriend's feelings.


 


After blue crabs turn to red, take them out and throw half of the oil out from the pan. THROW IT OUT!!!

 


Add pepper, ginger, garlic, half spring onions, half red chilies in the oil and fry for a minute till AROMATIC. YEAH! 

Aromatic is a very tough word but it has to do something with the smell.

Now add butter, soy sauce, oyster sauce, sugar and chicken stock and simmer shimmer for a minute.

Simmer shimmer once again for a minute. SHIMMY SHIMMY YA'LL !!!

Add the crabs and cook for 4 more minutes or until the sauce is thick to your undisclosed desires

So after doing something which I did not  have any clue of. The crabs were all done.

REPEAT AND I REPEAT there is no salt in this recipe and so do not put any. K

Prawns Fettuccine Alfredo

It's time I tell you a story of the day I made PRAWN FETTUCCINE ALFREDO

You need 

500 grams fettuccine pasta cooked Al dente. DON'T ASK ME SILLY STUFF LIKE "HOW TO BOIL THE PASTA?" READ ON THE PACKET LOSERS.

500 grams  prawns/shrimps

200 grams  freshly grated cheese of choice 

  



300 grams of cream

Half glass milk

100 grams butter

Onion powder 1 tablespoon

Garlic powder 1 tablespoon

2 tablespoon lemon juice 



 



Salt and pepper shall remain HASB E ZIAQA as always. Now lets get going.

Put onion powder, garlic powder, salt, pepper and lemon juice on prawns and mix them well.



 




Melt butter in a pan and fry prawns until they are semi red. Then remove the prawns from the pan.




  



Whisk cream with the milk.

If you want to make you're sauce white. Clean the butter out of the pan with the ingredients from prawns.

However, if you want flavor then add cream+milk in the pan without taking anything out. Heat it on medium low heat until it slow boils.

Add cheese and cook on medium till it slow boils. Check salt, pepper and onion/garlic powder flavor. Add more if required or according to your GODDAMN taste.

Now add them prawns. Cook for 2 minutes and add the fettuccine. There you go. 




 




You can also spice it up by adding a tablespoon of red chili flakes.

Grilled Fish Burgers w/ Sour Cream Dill Sauce

Proudly presenting, YES PROUDLY BECAUSE IT WAS ALMOST RUINED THANKS TO AN UNUSUALLY WRITTEN RECIPE .... okay okay I'm calm. Grilled Salmon Burgers w/ Sour Cream Dill Sauce.Its time I teach you all how to make it and break it and then make it right.

You need:

Salmon 1.5 pounds

Mustard 1 teaspoon

Salt 1 teaspoon

Pepper 1 teaspoon

One slice bread soaked in milk

Freshly chopped dill

Here is where I made a mistake by trusting the online recipe and not using my instincts. I added milk.

Milk was not suppose to be a part of this recipe so I somehow evaporated the milk later without the fish being cooked, anyway. (sad face)

You mix all the ingredients in the chopper and press the red button. As you can see, milk ruined the mix. 


 


So I used my KITCHEN INSTINCTS and made these patties by making the milk evaporate out of this by the help of an oven.

Now we refrigerate these for an hour meanwhile we make Sour Cream Dill Sauce.

You need:

1 cup cream

2 teaspoon chopped dill

2 tablespoon lemon juice

3/4 cup of mayo

2 tablespoon spring onion

1 teaspoon salt

Whisk all these ingredients in a bowl to make the cream. IT'S DELICIOUS. 



 


Time to grill these beauties 3-5 minutes each side. I WANT BUNS HUN. 


  



Set your burgers up like its something royal.

'Ca Chien Sot CA' - ' Fried Fish in Tomato Sauce'


'Ca Chien Sot Ca' let me say it again for you 'Ca Chien Sot Ca' I don't even know WTH is that but according to google this means 'Fried Fish in Tomato' which is also the name of my experiment today.

Time to teach ya'll how this Chinese beauty is made.


You need 1 kilogram boneless fish and cut it cube like

2 medium finely chopped onions

3 tomatoes finely chopped 

1/2 cup tomato sauce

2 teaspoon ginger garlic paste

1 teaspoon salt for gravy 1 teaspoon for marinade

1.5 teaspoon black pepper for gravy 1 teaspoon for marinade

2 tablespoon cornflour

2 tablespoon soy sauce

1 tablespoon chili sauce

2 teaspoon vinegar

1 egg

1 cup water

1 tablespoon chopped coriander

 


Add 1 egg, 2 tablespoon cornflour,  1 teaspoon salt & 1 teaspoon back pepper to the fish and marinate for 15-20 minutes. Mix it gently with hands and not any utensil. It is okay to get your hands dirty at times if you know what I mean.

 


Blend the tomatoes, tomato sauce, soy, chili sauce, ginger garlic paste, vinegar, salt& pepper into a paste and set aside. BLEND BLEND

 


Put 1 cup oil in a pan to deep fry fish until crispy. CRISP CRISP. Beautiful, ain't it? 


  


Keep fish aside. Now add 4 tablespoon oil in a pan and sauté onions until transparent.

Add paste & cook for 15 minutes. Add fish and cook for another 20 minutes on medium heat. If you think the gravy is burning then you can add 1/2 a cup water to let it cook for the mentioned time.



 


After 20 minutes it will be ready. If you want to spice it up you can add diced green chilies.

After great work & great decorative efforts (LOL JOKING) I give you 'Ca Chien Sot Ca' which apparently means 'Fried Fish in Tomato Sauce'.

This plate has been decorated specially for me maa. She is eating it right now and not giving a damn about the rest of the world. Mom ate the full late that's how I know it was tasty. TRY THIS AND GIMME FEED BACK.
