Spicy Crispy Chicken Burger

I love buns, I've been loving them since I was a kid. Don't even think about getting angry at me because a man need to love buns specially in a time where even women are loving buns. Not just buns I love burgers as well.

My love for burgers made me look for another different kind of burger recipe and then I did what I do best i.e making that burger because according to some people I'm just a home cook/wannabe chef which is actually true.

The sandwich/burger I am going to make today is a copy of the famous Wendy's Crispy Chicken Sandwich but I'll still call it Spicy Crispy Chicken Burger because I can.

Ingredients:

4 chicken breast fillets

1 egg

1 cup all purpose flour

1/3 cup Frank's Red Hot Sauce or any other good bran'd hot sauce

3 teaspoon salt

4 teaspoon red chili powder

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika powder

4 burger buns obviously

mayonnaise for buns

tomato slices

lettuce

pickles (optional)





First of all we need to cut the breast fillets according to the size of the buns.

Then we need to put a plastic sheet on it and flatten them by using a meat hammer.

Congratulations, your fillets are ready.










Now add the salt, red chili pepper, black pepper, paprika and garlic powder in the all purpose flour and mix it well.

Will look something like this if you do it right.







Add the egg in a bowl, put the hot sauce in it and whisk it.










Now put the egg batter, mixed flour breading and the fillets together.

Coat the fillet in the breading first, then add it to the egg batter and again coat it in the flour breading.

I REPEAT

1. Coat the fillet in the breading first.

2. Add it to the egg batter.

3. Again coat it in the flour breading.

Put the coated fillets in a tray and put them in a freezer for 20 minutes.










Now after 20 minutes, heat 2 cups of cooking oil in a pan on medium heat and start cooking your chicken fillets for 5-6 minutes each side.

Place them on a paper toweled plate.










Meanwhile the chicken is cooks, why don't you make yourself some sides like I made m yself some oven baked chips and coleslaw.







Put mayo on the buns, add pickles if any, tomato slices and lettuce leaves. You Spicy Crispy Chicken Burger is ready to be devoured by humans.

Shrimp Fried Rice

My love for shrimps is directly proportional to the hate I have for humans. HATE HATE HATE!!!

Its the second month of the fish season and I have yet to start my fish recipes for this year as I did last year but I have two recipes to share. One of them is Shrimp Fried Rice and the second one is Shrimp Coconut Curry which I will share later on.

Shrimp Fried Rice is my favorite type of fried rice after Thai Fried Rice which is pretty much the same with more spices but I am sure no one cares about what is my favorite type of rice.

Ingredients:

500 grams of shrimp shelled and deveined

1 1/2 cups of uncooked rice

1 carrot fine chopped

1/2 shredded cabbage

250 grams of boiled peas

3 green onions green part finely chopped

4 eggs

1 tablespoon flour

4 tablespoon soy sauce

2 tablespoon fish sauce

2 teaspoon salt (one for shrimp marinade + one for vegetables saute)

2 tablespoon black pepper (one for shrimp marinade + one for vegetables saute)








Boil your rice and cook them 90%. Drain the water out of them and set them aside to cool down.

Add salt, pepper and cornflour to the shrimps and mix.








In a non stick pan add 2 tablespoons oil and fry shrimps until they are cooked completely i.e pink and white. If you over cook them they will get hard and chewy.






Take the shrimps out in a separate plate.

Now add 4 tablespoons of oil in a non stick pan. Add four pinches of each salt and pepper in the egg batter and fry the eggs. Scramble the egg and take it out in a separate plate.







Now in a non stick pan add 3 tablespoons of oil and saute the vegetables starting from carrots, then add peas and then add cabbage with green onions.

Add salt, pepper and I made it a bit spicy by adding a teaspoon of red chili paste but you can also add chili garlic sauce if you want to spice up. (Spicing it up is totally optional) 








Now add the cooked rice to the pan.

Drizzle the soy sauce and fish sauce on the rice.

Add cooked shrimps and scrambled egg on it and mix the rice well. Lower the heat and stir it well, so all the ingredients are properly infused and mixed with each other.

Shrimp Fried Rice are ready.







If you want to eat it without any gravy then that's a choice as well but you would love it with Manchurian, Kung Pao and other recipes like that.

Mutton Trotters - Mutton Paaye - Chotey Paaye

Rishta Recipe 101 - This will be the name of my famous desi recipes that are necessary for a girl/woman to know in order to be rishta material. (THIS IS A JOKE SO STAY AWAY FEMINISTS)

I have been craving Mutton Paaye since Eid ul Azha. So, I finally have the time to make them today. Tried hard remembering mom's recipe and then I came across to Hirra Pervaiz's Mutton Trotters recipe on ticklethosetastebuds.blogspot.com which is practically the same.

So the credit of this recipe goes totally to Hirra and please all the females who read this,  do visit her blog ticklethosetastebuds.blogspot.com ya'll gonna love it.

Again I have not messed much with this recipe just the quantities of salt, red chili pepper turmeric, ginger and garlic paste have been changed. Also I added a bit of tomato puree just to give it a red/crimson-ish finishing and also it had its taste changes in it.
  

Ingredients for Mutton Trotter Soup/Yakhni:

6 mutton trotters

6 tablespoons of whole wheat flour (to clean the trotters)

12 glasses of water

1 tablespoon garlic paste

1 tablespoon ginger paste

1/4 teaspoon black pepper corns

1 onion finely chopped

1 teaspoon cloves

2 bay leaves

4 green cardamoms

1 black cardamoms


Ingredients for Trotter Gravy

1 cup ghee/oil (I used desi ghee)

1 large onion's paste

1 tablespoon garlic paste

1 tablespoon ginger paste

1 tablespoon red chili powder

1 tablespoon salt

1 teaspoon turmeric powder

1 teaspoon coriander powder

cooked mutton paaye

mutton trotter soup/yakhni

1/4 cup of tomato puree (optional)








Forgot to take one picture of the ingredients of gravy. I hope you can imagine it.

Now let's start making this amazing, desi, sticky and gooey thing.

Sprinkle flour over the mutton trotters and rub them with it. Let them be for 5 minutes and then rinse them.







Now put all the soup/yakhni ingredients in a pan, add the trotters and 12 glasses of water. Give this a boil and then lower the heat. Simmer it for 4 hours.

YES YOU HEARD IT 4 HOURS.

YES I WAITED ALL THIS TIME AND I WAS FREAKING HUNGRY.

But its okay, trust me.











After four hours the liquid of the yakhni shall be reduced and the trotters shall be cooked and tender.

Take the trotters out on a separate plate. Take the yakhni out and strain the whole garam masala from it.









Heat 1 cup of oil/ghee in a deep base pan. Add the onion paste to it and fry until its golden-ish.

Add the ginger, garlic paste and cook it till its fragrant.

Add the salt, red chili powder, turmeric and coriander powder. Mix it well with the onion paste mixture.

Add the trotter/paaye now and turn the heat up. Mix and coat the trotters properly with the gravy base. Cook it on high heat for 3-4 minutes or as you see the oil coming out of the gravy mixture.













Add the trotter soup/yakhni in it now and bring it to a boil.

After the it boils, lower the heat of the pan and simmer the gravy to your desired thickness.

Here I added the tomato puree because I remember mom adding some the last time she made it. It takes the taste of the gravy on a whole different level.










That's it people, Mutton Trotters/Paaye are cooked now. Garnish them nicely with chopped coriander. Serve them with Naan, Roti, Rice or anyone's feelings.
