Prawn Karahi

As winter is about to end in my homeland I am hopefully ending my series of seafood recipes. If you guys want me to make more seafood recipes please feel free to tell me in the comments.

Ending the series with a desi recipe called Prawn Karahi. Saw it on the Sanjeev Kappoor Khana Khazana Youtube channel, made a little adjustments on the ingredients according to my taste and I got to make one of the best Karahi's I have ever made.



This is my 154th recipe so far and I promise you I will start my own youtube channel after 200 recipes. With this said, I really hope I have enough money to buy a decent camera and a mic when I pass 200 recipes. So, far I have been extremely broke form the past 10 years but WHO KNOWS when my stars shine.

INGREDIENTS:

large prawns  600 grams

2 medium onions chopped

2 medium chopped tomatoes

tomato puree 6 tablespoons

5 dried red chilies

2 teaspoon whole coriander

2 teaspoon cumin seeds

2 green chilies thinly sliced

1 inch piece ginger juliened

freshly chopped coriander 2 tablespoons

8 black pepper corns

1/2 teaspoon garam masala powder

salt taste

1 teaspoon red chili powder


1/4 teaspoon turmeric





First we will make the karahi masala by grinding cumin, whole coriander, black pepper corns and dried red chilies.

I used fresh ones because they were easily available here but you guys go ahead and used the dried ones.










Time to add some oil to the pan and heat it over medium flame.

Add the chopped ginger and green chilies and fry until fragrant.

Add chopped onions and cook them till translucent or light brown.





Add the chopped tomatoes now along the tomato puree and cook till the tomatoes are tenders and properly cooked.

Occasionally give it a stir.





When the tomatoes are cooked you can now add the ground spices i-e salt, red chili powder, 1 tablespoon of karahi masala and turmeric.


Add the chopped coriander and give everything a good mix as well.



When this masala leaves the oil add the prawns and cook them until their color changes.



Add half a glass of water to the cooked shrimps and turn the flame on high.

When the water in the prawns start boiling add the garam masala and mix it thoroughly.








Turn off the flame after the water evaporates and you see oil separating from the masala. Prawn Karahi is ready to be served.



I had it with a paratha and it made my day. That is my honest feedback about this recipe.

Grilled Chicken Bruschetta

HEALTHY CHICKEN RECIPE - EPISODE SIX

GRILLED CHICKEN BRUSCHETTA


Health is wealth and since I am broke af I only have health. Why one should not look after it then.

This new Healthy Chicken Recipe episode brings forward a recipe from the land of Italy. Bruschetta which sounds like an abuse in Punjabi is basically an Italian starter which consists of bread with assorted toppings.

When I saw this recipe on Skinny Taste I had no hopes of a good taste but was still compelled to make. So www.skinnytaste.com put the Bruschetta toppings of grilled chicken and made it much more healthier which makes a perfect meal for weight watchers.

Hence, this recipe is called Grilled Chicken Bruschetta and mind you it is delicious.


With only a handful of ingredients and the fact that it is very easy to make, makes it even more of a delightful experience.

INGREDIENTS:

2 chicken breasts sliced in half

4 garlic cloves minced

3 medium tomatoes slices

1/2 red onion chopped

2 tablespoon of freshly chopped basil leaves

100 grams of cottage or low fat cheese diced in cubes

2-3 tablespoons of extra virgin olive oil

2-3 tablespoons of balsamic vinegar

1/2 teaspoon of salt

1/2 teaspoon of pepper




It is extremely easy to make.

The first thing you need to do is to chop the onion and put it into a bowl.

Then drizzle some olive oil and balsamic vinegar on it.

Season it with some salt and pepper.




Now we become a samurai for a couple of minutes and slice the rest of the stuff.

Mince the garlic with your very own hands.


Dice the tomatoes in medium sized cubes.


Chop chop the basil leaves.


Dice the cheese into cubes.


Leave the cheese for now and add the garlic, tomatoes and basil leaves in the balsamic onion bowl.

Mix it properly and leave it for 10 minutes.


Now we preheat the grill on medium high and season the chicken with a pinch of salt and pepper on both sides.

Grill the chicken pieces for 4 minutes on each side and set them up in a tray.



Add the cheese cubes to the Bruschetta and mix it properly.


Spread the Bruschetta over grilled chicken and take one bite to feel the different flavors running in your mouth. As someone who is not a big fan of tomatoes I loved this. I know I made it and I am kinda self praising but if you have a problem with my self praising then cook for me someday maybe but I know it will never be as good as this. I am such a hater.

Crispy Chicken Buffalo Sandwich

I have been often told by the people who have seen me that I look very intimidating and I look like I will pull a knife on them.

Fear not, I am not that harmful. I am good man the laaltain and you can talk to me about anything related to the food. Sure you can keep the personal Q & A to yourself but yes anything related the food and I am all ears.

I have never apologized this much for making a recipe that I have while making this one. This is southern style Crispy Chicken Buffalo Sandwich made with nothing but love and little hate for the people I dislike.



INGREDIENTS(FOR 3 SANDWICHES):

3 boneless chicken breasts cut in half


2/3rd cup butter milk (you can make your own butter milk by adding a tablespoon of lemon juice or vinegar in a cup of milk and leaving it for 15 minutes)

1 teaspoon ginger powder

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt

2 eggs

1 cup flour seasoned with salt, garlic powder and black pepper

Buns of your desired shape, I chose classic buns

Mayo for dressing

Buffalo Sauce for drizzling over chicken

Thick tomato slices for dressing

Iceberg lettuce for dressing







First and foremost we have to dip the chicken pieces in the butter milk. The we will add salt, paprika, ginger powder, garlic powder and pepper to it.

Mix it well and let it marinate for 4-6 hours.




Chicken will marinate in 4-6 hours and you can be useful by doing something good for someone meanwhile.

Now after 6 hours we will take out our chicken and prepare the breading station.

Start heating the oil in a frying pan on medium heat.

Put all purpose flour in a deep flat tray and season it with slat, garlic powder and black pepper.



Place this next to a chicken along another flat deep tray that has egg wash in it.

Now do as following numerically

1. Take out the chicken.

2. Dip it in the egg wash.

3. Cover the chicken piece in flour.

4. Fry the chicken for 3-4 minutes on both sides.

Repeat this for all the chicken pieces.




Now it is time to assemble the sandwiches.

Slice the buns in half and toast them in the oven for 1 minute.

Now follow the below steps numerically: (I am also teaching you all how to count)

1. Put mayo on the bottom bun.

2. Tomato slices over it.

3. Place 1 or 2 chicken pieces over it.

4. Generously drizzle buffalo sauce on it. Let it rain because you don't want to hold back.

5. Place the top buns and have more buffalo cause on the sides as a dip







Eat them with fries, coleslaw or any side that you prefer but let me tell you one thing. You will love this sandwich more than your best friend.
