Cajun Chicken Alfredo

I want to rant so bad today but I won't because whenever you say something on the internet it becomes public property and most of the public is such an ass that they will say whatever they feel like regardless of your situation.

So I keep most of my personal life and stuff to myself because people usually don't understand shit until they have to go through it themselves.

Anyway, once in a while there comes a pasta recipe that is extremely easy to make and very delicious to feast on that you all of a sudden forget all of  your problems are willing to ignore your strict diet routine.

Cajun Chicken Alfredo is one of those pastas.



Yes you heard it right. Cajun seasoning is an all purpose seasoning which is used in a lot of foreign recipes. I bought it from Green Valley (Mall of Lahore) but you can also get it from Al-Fatah and essajee's if you are from Lahore.

Even if you can't find Cajun seasoning you can make it at home by compiling the following things:

2 teaspoons salt

2 teaspoons garlic powder

1 teaspoon onion powder (optional)

2 1/2 teaspoons paprika

1 teaspoon ground black pepper

1 teaspoon cayenne pepper

1 1/4 teaspoons dried oregano

1 1/4 teaspoons dried thyme

1/2 teaspoon red pepper flakes

Just combine all of these ingredients and you'll get your Cajun spice mix.

Now let's get down to our recipe.

INGREDIENTS:

4 tablespoons olive oil


4 cloves garlic, chopped


450 grams of penne pasta


4 cooked chicken sausages, sliced


500 grams chicken breasts, thinly sliced


1 tablespoon cajun seasoning


Salt 1 tablespoon


400 grams cream


1/2 cup of milk


1 cup grated parmesan cheese


1/4 cup grated mozzarella


1/4 cup parsley/coriander






Boil the pasta as per the directions of the packet.


Meanwhile the pasta is being boiled you can finely chop your coriander/parsley and garlic cloves.


Drain the pasta and rinse with cold water. Keep it aside.




How on medium head add olive oil to a pan.


Add chicken, sausage slices and chopped garlic.


Cook until chicken is cooked and keep stirring so the garlic doesn't burn.




When the chicken loses the pink color add salt and cajun seasoning.


Mix and cook it with the pasta.




When the chicken is completely cooked and the spice mix has blended in, turn the heat to low and add the cream and milk.




Now add the grated parmesan, mozzarella and chopped coriander.


Give everything a good mix.




Add the pasta to the white sauce with chicken and mix it well until the pasta is completely coated. 


This is it.




Sprinkle some more chopped coriander over it and Cajun seasoning. Enjoy the creamy treat and get lost in the rich Cajun flavor.

Cheesy Taco Pasta



Have you ever thought of infusing the taco filling with a pasta? NO? I also did not but I came around a recipe on facebook which is known as Cheesy Taco Pasta and this recipe will satisfy your need for pasta, beef and cheese.


INGREDIENTS:

500 grams minced beef

400 grams canned chopped tomatoes

3 pickled jalapenos

350 grams pasta

1/2 onion finely chopped

salt per taste

2/3rd cup cheddar cheese or more

2/3rd cup mozzarella cheese or more

1/2 cup reserved boiled pasta water

2 tablespoons taco seasoning (ingredients for taco seasoning mention below)

handful of coriander finely chopped for garnishing

INGREDIENTS FOR TACO SEASONING:

1 tablespoon red chhili powder

1/4 teaspoon garlic powder

1/4 teaspoon ginger powder

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon dried oregano

1/2 teaspoon paprika

1 1/2 teaspoon ground cumin

1 teaspoon salt

1 teaspoon black pepper



Boil the pasta according to the packet's instructions and reserves 1/4 cup of boiled pasta water.

Chop the onions and the jalapenos finely.


Heat 2 tablespoons of olive oil in pan on medium heat and add chopped onions. Season them well with salt and cook them until they are transparent and tender for about 5 minutes.

Add the chopped jalapenos and cook for another 2 minutes.


Add minced beef and cook until it is not pink any more around 8-10 minutes.

Meanwhile in a grinder mix up the taco seasoning together.

Add the taco seasoning and drain any excessive fat present in the pan.

Mix the seasoning well with the minced beef.



Add the canned tomato and pasta water.

Start adding the shredded cheese as well and keep stirring it for a while until the liquid is about to dry.



Add the cooked pasta now and mix it well. Cheesy Taco Pasta is ready to go into our stomachs.


Sprinkle some finely chopped coriander over the pasta placed nicely in a bowl. Add sliced pickled jalapenos on the side as well and you are good to go for one pasta that you will never forget.

ONE PAN SPICY PASTA

I made this wonderful and tasty One Pan Spicy Past yesterday and its time to share the recipe with you all.

One Pan Spicy Pasta is very easy to make and it also has cheese in it. LOL


We will later talk more about women and their obsession with cheese but first write down the ingredients for One Pan Spicy Pasta.


300 grams of penne pasta


One can of plum tomatoes with juice. If you live abroad then you can use a can of fire roasted tomatoes instead of this.


1 and a half cup chicken broth

1 large finely chopped onion

1 tablespoon of green chili paste


1 tablespoon garlic paste


150 ml cream mixed with 150 ml milk. Use half and half instead of this if you live in America or UK.

1 teaspoon black pepper A cup of shredded chili cheese 300 grams of Jalapeno sausages Salt to your taste

If you have a 10" deep cast iron skillet then use that if not then any other non stick pan.

Heat 2 tablespoon olive oil in pan and fry the sausages till they get puffed crispy on both sides.

Add garlic paste & finely chopped onion. Fry them on medium heat until the onion softens.

Add salt, pepper, tomato can contents, chili paste, milk & cream mixed together, chicken broth and stir to mix it well on low heat.

Add the uncooked pasta and stir it well to coat and mix it with the gravy.

After mixing the pasta bring the gravy to a boil and close the lid on low heat for 15 minutes.

If you think the gravy is less then add 2 tablespoon tomato paste with 1/2 glass water and then cover it with the lid for 15 minutes.


After 15 minutes take of the lid and your pasta is ready. Dish it all out in one pan. DON'T EAT YET.

Cover your pasta with shred chili cheese, turn on the broiler of your oven and heat it for 3-5 minutes. That's all.

Sprinkle a little dried parsley or oregano and your 'One Pan Spicy Pasta' is ready to be eaten like an animal.

Spicy Mac & Cheese

I can't really understand a relationship between a girl and cheese.

Whenever you mention cheese in front of a girl her face brightens up like uski kameti nikal ai ho jaise. Could not say that in English.

To celebrate this unique love I will tell you girls how to make a spicier version of Mac & cheese. So better be attentive.

You need the following ingredients:

400 grams macaroni boiled

1 and a half glass of milk


2 tablespoon flour mixed in the half glass of milk

100 grams of butter

250 grams of cheese of your own choice

Red chili flakes

(And the totally optional) A can of sliced mushrooms

And 4 jalapeño filled sausages sliced.

Step 1: Melt butter.

Step 2: fry the mushrooms and sausages in the butter. When fried properly separate them from butter.

Step 3: add the first glass of milk, bring to boil and then add the half glass of the milk containing the flour.

Step 4: Add cheese and stir until the cheese melts.

Step 5: when the thick cheese coating is ready add fried mushrooms, sausages, chili flakes. salt and pepper per taste.

Step 6: add the boil macaroni and flip it until the properly coated by the cheese.

Your Spicy Mac & Cheese is ready. Eat it fresh and do not share with anyone.
