Stir Fried Chili Chicken Noodles

Patience is the key to success not the shit that DJ Khaled tell you guys.

Patience is lacking in the people, kindness is lacking in the people yet the ones who have these traits are the most beautiful human beings in the world.

Patience is also required in making Asian food. The weirdest food which takes 30+ minutes in preparation and it is cooked in only 5-10 minutes. I HATE MAKING ASIAN FOOD BUT I LOVE EATING IT.

Then again I love eating almost anything (HALAL to be more precise)

There is a new restaurant in town and I have been there thrice. The food is amazing and I urge you all to try that out. It is called The Rice Bowl and the whole concept of the restaurant is very innovative and different. They also have a a home delivery menu which I had my eyes on and upon Noor's suggestion I tried their Stir Fried Chili Chicken Noodles AND THEY WERE BEYOND AMAZING. So amazing that I had to try and make them myself and I did.

The preparation time is 30 minutes which involves a lot of cutting in detail. The rest is history.

INGREDIENTS:

1 pack of Chinese egg noodles (preferred brand in the pictures; bought from Al Fatah)

250 grams of chicken cut into thin slices

1 can of mushrooms, sliced

1 tablespoon of sliced ginger

1 tablespoon of sliced garlic

1/2 cup of chicken broth

1 tablespoon of vinegar

1 tablespoon of oyster sauce

1 1/2 tablespoons of soy sauce

1 tablespoon of fish sauce

2 tablespoon of oyster sauce (one for chicken and one for sauce)

1 teaspoon cornflour

1 small onion, sliced in cubes

green onions (white part cut into inch long slices)

4-6 green chilies sliced in half

First we will boil the noodles. If you are using the same brand as in the pictures or a similar one then do not boil the noodles for more than 30 seconds. Yes you read it right, 30 seconds because these noodles cook quickly.

Marinate the chicken in a pinch of salt and pepper, 1 tablespoon vinegar, 1 tablespoon sesame oil and 1 teaspoon of cornflour.

Mix it well and set it aside.

Heat 2 tablespoons of oil in a wok or non-stick pan and fry the ginger garlic alongside the chicken until the chicken is completely cooked.

While the chicken cooks make this sauce by combining soy sauce, chicken stock, oyster sauce, fish sauce and sesame oil.

Now take the chicken out of the wok and add 2 more tablespoons of oil.

Start frying the vegetables 1 minute each, starting from the mushrooms, green onions, onions and green chilies.

Now add the sauce while stir frying the vegetables and quickly add the cooked noodles and chicken.

Give everything a thorough stir and Stir Fried Chili Chicken Noodles is ready to be served.

Asian food doesn't get much better than this. Dive in the amazing Stir Fried Chili Chicken Noodles.

Chicken Malai Handi

Cooking in summers is directly proportional to living in hell. It's like the devil is standing there and laughing at you like he is waiting for your arrival in hell but hats off to the mothers, the sisters and the wives who do this every day. I KNOW YOUR PAIN and very deeply tbh.

With this thought and sentiment I would like to give you another installment of a very quick yet a very delicious recipe.

I have taken this recipe from a blog called The Spice Tales http://thespicetales.blogspot.com/ which is run by Urooba Malik one of the kindest people I have ever come across. Thank you Urooba for such a wonderful, easy and quick recipe.

This recipe is called 'Chicken Malai Handi' and is no doubt one of the best boneless chicken handis I have ever tasted. The original recipe link is - http://thespicetales.blogspot.com/2016/03/desi-all-way.html

Ingredients:

1 kg boneless chicken breast cut into 1-1.5 inch bite sized chunks

15 cashews

2 tablespoons sesame seeds

1 tablespoon salt

1 teaspoon black pepper

1 tablespoon ginger paste

1 tablespoon garlic paste

5 tablespoon cream

1 cup yogurt

50 grams butter

1/4 cup water

The process is very simple.

Need to prepare the marinade for the chicken.

For that we will grind the cashew nuts and sesame seeds in to a fine powder.

Now in a bowl add yogurt, cream, ginger paste, garlic paste, salt, black pepper and grounded sesame seeds + cashew nuts.

Mix it up until everything is properly infused in each other like two lovers become one. NO THERE IS NOTHING LIKE LOVE.

Add the chicken in it and marinate it for at least 2 hours.

After the chicken is marinated. Melt the butter in a non stick pan and add the chicken with all teh marinade in it along the water.

Let it cook on medium low heat for 10 minutes while covered.

Uncover it and cook it for 10 more minutes on medium heat.

Chicken Malai Handi is ready to serve.

Garnish it with chopped coriander and green chilies. Best with roghani na'an, roti or paratha, I even had it with a little mutton biryani I made yesterday and it was amazing.

Ladies and gentlemen take a dive with me in this creamy dish called Chicken Malai Handi.

Dragon Chicken

Everyone is waiting for the new season of Game of Thrones because who won't. I wanna know more about the dragons than any other character in it.

I am a bit impatient so I rather bring those dragons out one way or another.

So, I've been hearing about this Indo-China recipe called Dragon Chicken a lot. Never found it in any restaurant but the name sounds too intriguing for me to try on.

I wish I could find a real life dragon, kill it and mix it with chicken. Cook it and then that'd be some really insane Dragon Chicken but for now I have to do with this.

Ingredients:

500 grams chicken cut in 1-2 inch long cubes

1/2 medium red capsicum cut in triangles

1/2 medium yellow capsicum cut in triangles

1 big tomato cut in triangles

3-4 green onion bulbs finely chopped

green part of green onions finely chopped

3-4 garlic cloves finely chopped

1.5 teaspoon of ginger paste (half for chicken one for gravy)

1/2 teaspoon garlic paste for chicken

1 tablespoon vinegar

1 tablespoon soy sauce

1.5 teaspoon of salt (half for chicken and one for gravy)

1.5 teaspoon of black pepper (half for chicken and one for gravy)

1 teaspoon of garam masala (half for chicken and half for gravy)

1.5 teaspoon of red chili powder (half for chicken and one for gravy)

2 tablespoon corn flour

Marinade the chicken with ginger paste, garlic paste, salt, garam masala, black pepper and red chili powder. Let it be for 30 minutes.

Then add cornflour and a little of chicken broth and mix it well.

Heat oil in a non stick pan and fry the chicken until golden brown.

Drain the chicken and keep the chicken aside.

Now heat up 2 tablespoon olive oil in a non-stick frying pan, add ginger paste and chopped garlic.

Fry until fragrant then add the chopped green onion bulbs.

Add the red and yellow capsicum, fry for a minute.

Add tomatoes and stir fry for another 30 seconds.

Now add ketchup, chicken broth, salt, black pepper, red chili powder, garam masala, soy sauce and vinegar. Let it cook on high heat for a minute.

Lower the heat to medium and add the chicken.

Add the chopped green onions and some sesame seed which is just  optional.

If you want to make it spicier use chili garlic sauce instead of ketchup and add a tablespoon of sriracha sauce if you have that.

Let it cook until your desired thickness of gravy and Dragon Chicken is read to serve.

Dungeons, dragons, kings and queens. Brace yourselves for Dragon Chicken.
