Turkish Kebab

HEALTHY CHICKEN RECIPE - EPISODE ONE

TURKISH KEBAB

YES YES I have finally decided to listen to you guys and I will bring you healthy chicken recipes from time to time. I have around 5-6 recipes for now including this one which I will be showing you all today.

Ya'll still eat junk I know and ya'll definitely not losing any weight lazy bums but at least you won't eat my ears for not making HEALTHY CHICKEN recipes.

This one is called Turkish Kebab and is very mildly spiced grilled chicken. A unique one for sure but as soon as you bite it it will give you distinct flavors of all of its ingredients.


INGREDIENTS:

500 grams boneless chicken breast cut in 1.5 inch cubes

150 grams yogurt

½ tsp turmeric

1 tsp paprika

1 tsp ground cumin

2 lemon, juiced

salt and pepper

TO SERVE:

1 medium ice berg lettuce

1 medium red cabbage finely sliced

1 carrot thinly sliced

red chili flakes

yogurt




First of all we marinate the chicken in yogurt, salt, pepper, paprika, turmeric and lemon juice.

Keep it aside for marination for at least 20 minutes.



Meanwhile get done with slicing and arranging all the vegetables. You can eat this with pita bread as well but I decided to keep it HEALTHY for ya'll.



Preheat the grill pan and rub some oil over it.

Place the kebabs on a long tooth pick and grill them at least for 4-5 minutes on each side. The over all grill time should not be more than 20 minutes.


Prepare your serving according to whatever you feel like. TBH I just randomly threw some of the vegetables I cut.


Place the chicken skewers on it one by one. Top them with yogurt and red chili flakes to give them more taste and color.

Shrimp Fried Rice

My love for shrimps is directly proportional to the hate I have for humans. HATE HATE HATE!!!

Its the second month of the fish season and I have yet to start my fish recipes for this year as I did last year but I have two recipes to share. One of them is Shrimp Fried Rice and the second one is Shrimp Coconut Curry which I will share later on.

Shrimp Fried Rice is my favorite type of fried rice after Thai Fried Rice which is pretty much the same with more spices but I am sure no one cares about what is my favorite type of rice.

Ingredients:

500 grams of shrimp shelled and deveined

1 1/2 cups of uncooked rice

1 carrot fine chopped

1/2 shredded cabbage

250 grams of boiled peas

3 green onions green part finely chopped

4 eggs

1 tablespoon flour

4 tablespoon soy sauce

2 tablespoon fish sauce

2 teaspoon salt (one for shrimp marinade + one for vegetables saute)

2 tablespoon black pepper (one for shrimp marinade + one for vegetables saute)








Boil your rice and cook them 90%. Drain the water out of them and set them aside to cool down.

Add salt, pepper and cornflour to the shrimps and mix.








In a non stick pan add 2 tablespoons oil and fry shrimps until they are cooked completely i.e pink and white. If you over cook them they will get hard and chewy.






Take the shrimps out in a separate plate.

Now add 4 tablespoons of oil in a non stick pan. Add four pinches of each salt and pepper in the egg batter and fry the eggs. Scramble the egg and take it out in a separate plate.







Now in a non stick pan add 3 tablespoons of oil and saute the vegetables starting from carrots, then add peas and then add cabbage with green onions.

Add salt, pepper and I made it a bit spicy by adding a teaspoon of red chili paste but you can also add chili garlic sauce if you want to spice up. (Spicing it up is totally optional) 








Now add the cooked rice to the pan.

Drizzle the soy sauce and fish sauce on the rice.

Add cooked shrimps and scrambled egg on it and mix the rice well. Lower the heat and stir it well, so all the ingredients are properly infused and mixed with each other.

Shrimp Fried Rice are ready.







If you want to eat it without any gravy then that's a choice as well but you would love it with Manchurian, Kung Pao and other recipes like that.

Shamsher's Special Chowmein

What do you do when your own people don't give a shit about you?

You cook the best damn meal, eat it and stop feeling sorry for yourself.



There is a time in every man's life when he wants to do something special.

So, I decided to make my very own Special Chowmein because I love Chinese food and Jackie Chan movies.


Ingredients


100 grams boneless beef


100 grams boneless chicken


100 grams prawns


Cook the beef for 30 minutes in a pressure cooker otherwise it won't get tender properly and will be chewy.


Marinate the chicken with a pinch of salt, pepper and 1/2 teaspoon sesame oil. Keep it aside and don't look at it.


Vegetables are pretty much up to your choice. Here is what I got.

1 carrot


1 onion


Half a cabbage


Can of sliced mushrooms


The rest of the ingredients are

400 grams boiled Chinese egg noodle

1 tablespoon ginger garlic paste


1 tablespoon oyster sauce


1 tablespoon vinegar

2 tablespoon soy sauce


1 teaspoon salt


1 teaspoon black pepper


1/4 cup chicken stock


2 tbsp oil


1 tablespoon sesame oil 






Add oil in a pan or skillet or a wok. Add  ginger garlic paste with the cooked beef and stir fry for 3-4 minutes.




Add the boneless chicken. Cook till the chicken is tender and then add the prawns.



Stir fry for 2-3 mins and then add the chicken stock, soy sauce, vinegar and the oyster sauce.


Now time to enter the vegetables. The hardest ones go in first. Which makes carrots and shrooms.



Now goes in the onions and cabbage. 

Add salt, pepper and sesame seeds(optional) with a tablespoon of sesame oil.




Stir fry for a minute again and then add the noodles and chopped sprin onions.

MIX MIX

Chowmein is ready to serve.




Special Chowmein is ready. Really easy to make. Kinda hard to decorate but oh well. Put some sesame oil as seasoning to the chowmein and enjoy.
