Mutton Malai Boti

From a very long time many people have been telling me to make this but I was being a bit inconsiderate of their requests.

My previous recipe for Chicken Malai Tikka was liked by a lot of people and the response was amazing so I decided that I need to give this a try as well. This recipe is none other than Mutton Malai Boti.



To make my version of this luscious BBQ specialty you need to make a paste by grinding 1/4th bunch of coriander, 6-8 green chilies, 1 inch piece of ginger and 4 garlic cloves with some water.




INGREDIENTS:

2 tablespoon papaya paste

2 kilogram boneless mutton cut in 1 inch or slightly bigger cubes

1 teaspoon garam masala

2-3 teaspoons salt or as per taste

1 tablespoon cornflour 

half cup yogurt 

half cup cream

half cup of green paste

1 teaspoon crushed red chilies 


1 teaspoon red chili powder

1 teaspoon black pepper powder




It is very simple to make. 

Put the meat in a deep bowl.

Add all the ingredients to the meat and mix everything properly.

Cover the bowl with plastic sheet or aluminum foil.

Let this marinate for 4 hours to preferably overnight.






I let it rest overnight.

Some people told me that the marinade is too thin or watery but when you will give it propery time to marinate, the meat will absorb a lot of it and the marinade will thicken,

After a full night of marination my meat looks something like this.



NOW THERE IS A BIG PROBLEM!!!

I do not have a desi grill or even a smoke to make this the way it is supposed to.

BUT WHEN ONE DOOR CLOSES EVERYTHING CLOSES AND YOU SPEND THE REST OF YOUR LIFE IN ETERNAL DESPAIR.

Joking ! You can always make this in an oven by broiling it.

Preheat the oven on broil at 400 degrees. Will take around 10-20 minutes depending upon your oven/

After preheating take a baking tray, cover it with aluminum foil.

Spray or brush some cooking oil on it.

Place the marinated meat on it and out it in the oven for around 20-25 minutes.




Take out the tray and flip all the pieces of meat. Broil it for another 15-20 minutes and Mutton Malai Boti is ready to be served.




Serve it over some fresh lettuce and slices of onion and sprinkle some chopped coriander on it. Have it with chatni, naan and I promise you that you will love me forever. JOKING! There is nothing like love.

Red Flaming Hot Chicken

I used to love Cheetos but then I grew older even though I was quite old when they were introduced in Pakistan but WHO CARES as far as you are young at heart? NO? S#!T

Time to give all you Cheetos lovers something to cheer for and bug your mothers. IF YOU KIDS ARE NICE YOU WILL MAKE THIS YOURSELVES. OKAY?

I saw this a couple of months ago somewhere on Facebook and its very easy, super delicious and crunchy. I know you all like the crunch you know that sound of crushing something between your teeth not exactly as enjoyable as crunch of a crushed heart but still. Can be served as a nice starter or appetizer with any dip of your choice.

THIS IS RED FLAMING HOT CHICKEN which I made by using crushed Red Flaming Hot Cheetos but you can use your preferred Cheetos flavor.


Ingredients:

500 grams boneless chicken breast cut in to long thick strips

4 eggs

1 cup of all purpose flour

1 teaspoon salt

1 teaspoon red chili powder

1 teaspoon black pepper

1 teaspoon garlic powder

1 big bag of red flaming hot Cheetos

Canola oil for frying



First we need to blend all the Cheetos in a powdered form. Using a blender or a chopper.



Then we will cover a frying pan in half inch canola oil. Put it on low heat so it gets prepared when the breading station is ready.


Now we will mix the salt, red chili pepper, black pepper and garlic powder in the flour.

Place the whisked eggs, flour mixture and crushed Cheetos next to each other so the breading can be done easily.


Now I will show you how the breading is done.

1. Coat the chicken in flour mixture. (shake the excess flour)
2. Coat the floured chicken in the egg batter. (shake the excess egg batter)
3. Coat the egg battered chicken in crushed Cheetos. (or you can just follow the pictures below)

Put all the prepared chicken on a foil covered tray.



The oil is ready and you should fry the chicken not more than 4 minutes on both sides.

Take it out on a paper toweled plate. Let it cool down for 5 minutes and its ready to be plated.

So ladies and gentlemen I just made a dip with mayo, red chili flakes, mustard, vinegar and a little buffalo sauce BUT you can eat it with ketchup or even yogurt for all I care.

Dynamite Shrimps

I love shrimps from as long as I can remember which makes it the only thing I love the most after family.

Months ago ER QUEEN from twitter told me to make PF Chang style Dynamite Shrimps and share the recipe but I had never taste it so I was a bit hesitant.

In my short visit to US I never had the chance to visit PF Chang so I decided to attempt this myself.

True to it's name. Dynamite Shrimps is a burst of different flavors and is definitely a must have or make.


Ingredients For Fried Shrimps:

500 grams large shrimps peeled and devained

1/2 cup all purpose flour

2 eggs

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon red pepper

4 tablespoon bread crumbs

Ingredients For Sauce:

7 tablespoons mayonnaise

5 tablespoons ketchup

3 tablespoons sweet chili sauce

4 tablespoons sriracha sauce (if not available then any other hot sauce)

4 tablespoons soy sauce

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper


First of all I needed to get rid of that shrimp tail so I did that.


Now we mix the all purpose flour with salt, black pepper, red pepper and bread crumbs.


Next we break the two eggs and whisk them and prepare the breading station by placing the egg batter and flour mixture side by side.

Dip the shrimp in the egg batter and then coat it with the flour. Repeat this process once more to complete the shrimp coating.



Now we move towards frying it.

So we will warm up some oil in a non stick pan on medium low heat.

Fry the shrimps in it till golden brown from both sides around 3-4  minutes.

Take the shrimps out separately.


They look so nice and chunky or they don't?

Now we prepare the sauce.

In a bowl add mayonnaise, salt, black pepper, red pepper, ketchup, sweet chili sauce, soy sauce and sriracha sauce. Whisk it till everything in the bowl is properly mixed.

This is your dynamite sauce.



Now you just take out a nice cocktail glass.

Dip the shrimp in the dynamite sauce and add it to the glass.

Top it off with finely chopped green onions and Dynamite Shrimp is ready to serve.


Ladies and gentlemen, I can't say something new every time but prepare your eyes for Dynamite Shrimps.
