Cajun Chicken Alfredo

I want to rant so bad today but I won't because whenever you say something on the internet it becomes public property and most of the public is such an ass that they will say whatever they feel like regardless of your situation.

So I keep most of my personal life and stuff to myself because people usually don't understand shit until they have to go through it themselves.

Anyway, once in a while there comes a pasta recipe that is extremely easy to make and very delicious to feast on that you all of a sudden forget all of  your problems are willing to ignore your strict diet routine.

Cajun Chicken Alfredo is one of those pastas.



Yes you heard it right. Cajun seasoning is an all purpose seasoning which is used in a lot of foreign recipes. I bought it from Green Valley (Mall of Lahore) but you can also get it from Al-Fatah and essajee's if you are from Lahore.

Even if you can't find Cajun seasoning you can make it at home by compiling the following things:

2 teaspoons salt

2 teaspoons garlic powder

1 teaspoon onion powder (optional)

2 1/2 teaspoons paprika

1 teaspoon ground black pepper

1 teaspoon cayenne pepper

1 1/4 teaspoons dried oregano

1 1/4 teaspoons dried thyme

1/2 teaspoon red pepper flakes

Just combine all of these ingredients and you'll get your Cajun spice mix.

Now let's get down to our recipe.

INGREDIENTS:

4 tablespoons olive oil


4 cloves garlic, chopped


450 grams of penne pasta


4 cooked chicken sausages, sliced


500 grams chicken breasts, thinly sliced


1 tablespoon cajun seasoning


Salt 1 tablespoon


400 grams cream


1/2 cup of milk


1 cup grated parmesan cheese


1/4 cup grated mozzarella


1/4 cup parsley/coriander






Boil the pasta as per the directions of the packet.


Meanwhile the pasta is being boiled you can finely chop your coriander/parsley and garlic cloves.


Drain the pasta and rinse with cold water. Keep it aside.




How on medium head add olive oil to a pan.


Add chicken, sausage slices and chopped garlic.


Cook until chicken is cooked and keep stirring so the garlic doesn't burn.




When the chicken loses the pink color add salt and cajun seasoning.


Mix and cook it with the pasta.




When the chicken is completely cooked and the spice mix has blended in, turn the heat to low and add the cream and milk.




Now add the grated parmesan, mozzarella and chopped coriander.


Give everything a good mix.




Add the pasta to the white sauce with chicken and mix it well until the pasta is completely coated. 


This is it.




Sprinkle some more chopped coriander over it and Cajun seasoning. Enjoy the creamy treat and get lost in the rich Cajun flavor.

Chicken Tomato Cheesy Farfalle



This is the most easy pasta I have ever made and its also a quick one with a total cooking time of 30 minutes.



This recipe is called Chicken Tomato Cheesy Farfalle and this will take you to places you're never been before; also to the hospital if you have blood pressure or high cholesterol.

INGREDIENTS:

2 tablespoons olive oil


500 grams boneless chicken breast, cut into bite-size pieces

1 tablespoon garlic paste

400 grams can of diced tomatoes

400 grams pasta/spaghetti sauce

100 grams of cream cheese

250 grams of chopped spinach leaves

400 grams of cooked farfalle pasta

1 cup shredded mozzarella cheese or more according to your choice





Sprinkle some salt and pepper over the chicken.

Heat 1-2 tablespoon of olive oil in a pan and cook the chicken until tender.

Take out the chicken from the pan.





Now turn the heat to medium low and in the same pan add diced tomato can, pasta sauce and garlic paste.

Mix it well.





Add cream cheese to it and lower the heat. Mix it till the tomato sauce changes color.

Now add chicken and spinach. Cook it till the spinach is tender and mixed properly with the sauce.

Add the pasta now and mix until its properly coated.

Turn of the heat and let the flavor settle for 5 minutes.





Dish out the pasta in a baking dish and cover it with shredded mozzarella as much as you want.

Preheat the oven on medium (MY OVEN'S UNITS HAVE DISAPPEARED SO I JUST DO IT BY JUST HAVING AN IDEA)

I wanted to shout this out.

I hate my oven. SOMEONE BUY ME A NEW ONE PLEASE.

Bake your pasta in the oven for 10-15 minutes or until you see the cheese bubbling hot.

Chicken Tomato Cheesy Farfalle is ready to serve.

Creamy Mushroom and Shrimp Pasta

There comes a time when I don't feel like making anything for days and it goes on like this for weeks. Even now when mom's not here anymore, even when I know I have a 6'3" younger brother to feed but he's trying his best to keep up with me and I love him for that.

Moving forward, someone told me to make something which has shrimps, mushrooms and cheese. So, I opened up google and wrote all of these three things. The thing that came up was Creamy Mushroom and Shrimp Pasta. It is quite similar like any pasta with Alfredo sauce but its prepared with dried basil, paprika, crushed red chilies and salt combined with milk, cream and two different types of cheese which gives it a very different mild herb-ish kind of taste. (WHAT THE HELL IS HERB-ISH I NEED TO EDUCATE MYSELF)

I don't even know what the hell I said in the above paragraph but to hell with it. Let's make Creamy Mushroom and Shrimp Pasta.

Ingredients:

4 tablespoons olive oil (2 for shrimps and 2 for mushrooms)

500 grams of shrimps without shells deveined

1 tablespoon garlic paste

1 teaspoon dried basil 

crushed red chili pepper as per taste

salt as per taste

1 teaspoon paprika (1/2 for shrimps and 1/2 for mushrooms)

1/2 cup milk

1/2 cup cream

1 can of mushrooms sliced

1/2 cup grated Parmesan cheese

3/4 cup shredded mozzarella cheese

250 grams of pasta linguine or fettuccine (almost half a pack)

cooked pasta water (optional - to make the sauce less thick if required)

250 grams of boiled peas (totally optional)

finely chopped spring onions (very optional)









We will start off with cooking the pasta according to the instructions of the packet. Saving the cooked pasta water in a separate bowl for later use.








Add 2 tablespoons of olive oil on medium heat in a pan and cook the shrimps with the garlic paste. While the shrimps turn pink season them with salt, paprika, crushed red chili and dried basil. Cook them till they turn pink completely like in the pictures below. I hope you can see though.

Take them out in a plate.








Put 2 more tablespoons of olive oil in the pan. Add the sliced mushrooms cook them till they release their water and season them with salt, paprika and a little dried basil.






Now you add the cooked shrimps to it and fry it for a minute.






Quickly turn the heat on low and add the milk and cream. Mix both of them and bring it to a boil.






Now you can add the the optional above mentioned veggies, peas and the chopped green onion.






Its time to add them cheeses in it one by one. Let the sauce mixture simmer and add the parmesan first. Mix it till it combines with the sauce and then quickly add the shredded mozzarella (ella ella aye aye) and mix it to combine it with the sauce. Add salt, paprika and basil to adjust the sauce accordingly.






Time to add the cooked pasta in the sauce to layeth the final smacketh down to complete the recipe.
