Mighty Beef Nihari

I asked for recipe suggestions last week and everyone is so lame that only like 4 people replied with things that I have already made before EXCEPT for my friend Irfan Junejo who is a very talented vlogger and you all can subscribe to his vlogs at https://www.youtube.com/user/IJ7Films

He suggested to make Beef Nihari and GUESS WHAT GUYS? Our beloved PM Nawaz Sharif aka Mian Sahab got disqualified at the very next day so that made it a perfect time to make Beef Nihari kudos to the 5 judges.



INGREDIENTS:

1.5 kg beef with bones (nalli bone preferred)
1 tablespoon coriander powder
1 teaspoon turmeric-
2 tablespoon red chili powder
1.5 tablespoon salt
2 black cardamom
8 cloves
 1 teaspoon black pepper whole
1 inch cinnamon
1 star anise
small javitri piece
1 tablespoon fennel seed
1 tablespoon cumin
1 teaspoon soonth (dry ginger)
1/ cup flour
1/2 cup yogurt
2 teaspoon ginger paste
2 teaspoon garlic paste
2 cup oil
3 onion sliced
green chilies
lemon

ginger julian
1 teaspoon laal kashmiri mirch or degi mirch






This is a bit lengthy recipe as it takes almost 3 hours and it is better that you spend that time monitoring it rather than sitting anywhere and let this burn.

We'll start off with grinding the Nihari Masala by grinding javitri, black pepper, cumin, fennel seeds, cloves, black cardamoms and the star anise in to a fine powder form.


Now it is time to add one cup of oil in the pan and fry the sliced onions in it till golden brown.


After the onions are brown add the beef with the ginger paste and garlic paste. Add the Nihari Masala along with salt, red chili powder, turmeric and dry ginger.


Fry the meat for 5 minutes.

Mix one glass of water in yogurt and stir it till it is completely mixed.

Add the yogurt mixture in the pan along with 3 more glasses of water.

Let it cook for medium heat on one hour.



After one hour mix one glass of water in the flour. Whisk it till the flour is completely mixed with in the water.

Now this step is quick and that's why I couldn't get to take all the pictures.

You need to pour the flour mixture in the pan through a strainer and mix it in the pan quickly.

After adding and mixing the flour mixture the nihari will be cooked for another hour.





During this time the bones will fall off from the meat as it will get super tender and make sure you keep on stirring frequently.

Heat one cup of oil in a pan and add kashmiri red chili powder or degi mirch in it.

Add the spiced oil in the pan and cover it with a lid.

Cook it for 5 minutes on low heat and the Beef Nihari is ready.




Let it cool down and take some oil from the top and keep it aside for garnishing.

Garnish the Beef Nihari with some of red oil, grind cumin, green chilies, chopped coriander, julienne ginger and a lemon wedge.



Beef Nihari is ready to serve.

Mutton Malai Boti

From a very long time many people have been telling me to make this but I was being a bit inconsiderate of their requests.

My previous recipe for Chicken Malai Tikka was liked by a lot of people and the response was amazing so I decided that I need to give this a try as well. This recipe is none other than Mutton Malai Boti.



To make my version of this luscious BBQ specialty you need to make a paste by grinding 1/4th bunch of coriander, 6-8 green chilies, 1 inch piece of ginger and 4 garlic cloves with some water.




INGREDIENTS:

2 tablespoon papaya paste

2 kilogram boneless mutton cut in 1 inch or slightly bigger cubes

1 teaspoon garam masala

2-3 teaspoons salt or as per taste

1 tablespoon cornflour 

half cup yogurt 

half cup cream

half cup of green paste

1 teaspoon crushed red chilies 


1 teaspoon red chili powder

1 teaspoon black pepper powder




It is very simple to make. 

Put the meat in a deep bowl.

Add all the ingredients to the meat and mix everything properly.

Cover the bowl with plastic sheet or aluminum foil.

Let this marinate for 4 hours to preferably overnight.






I let it rest overnight.

Some people told me that the marinade is too thin or watery but when you will give it propery time to marinate, the meat will absorb a lot of it and the marinade will thicken,

After a full night of marination my meat looks something like this.



NOW THERE IS A BIG PROBLEM!!!

I do not have a desi grill or even a smoke to make this the way it is supposed to.

BUT WHEN ONE DOOR CLOSES EVERYTHING CLOSES AND YOU SPEND THE REST OF YOUR LIFE IN ETERNAL DESPAIR.

Joking ! You can always make this in an oven by broiling it.

Preheat the oven on broil at 400 degrees. Will take around 10-20 minutes depending upon your oven/

After preheating take a baking tray, cover it with aluminum foil.

Spray or brush some cooking oil on it.

Place the marinated meat on it and out it in the oven for around 20-25 minutes.




Take out the tray and flip all the pieces of meat. Broil it for another 15-20 minutes and Mutton Malai Boti is ready to be served.




Serve it over some fresh lettuce and slices of onion and sprinkle some chopped coriander on it. Have it with chatni, naan and I promise you that you will love me forever. JOKING! There is nothing like love.

Masala Mutton Chops

Sometimes I lose track of the number of recipes I have made and it is until I open up the blog to see. This is my 151st recipe and I thought I would be done by the 50th but look at me now.

I am grateful because I haven't been taught to be ungrateful and I think gratitude is important to keep yourself positive which again I am not because of the nature of my experiences. I hope things change for me because they really need to or else you guys will keep seeing recipes which will eventually make you say the same things that most of you have been saying to me which are "Don't you have anything else to do other than going to the gym and cooking?"

WOW! This is actually my first ever rant or sob story on the blog. I better move to the recipe which is Masala Mutton Chops. Again trying to satisfy the desi in me this week I choose mutton.



INGREDIENTS:

1 kilogram mutton chops


4 medium onions finely sliced

4-6 green chilies sliced in halves

3 tablespoons lemon juice

1/2 teaspoon turmeric

3/4 cup yogurt

1 cup tomato puree or 3 tomatoes finely chopped

1 tablespoon ginger garlic paste

2 teaspoon red chili powder

salt to taste

1 teaspoon garam masala

6-8 black pepper corns

1 cinnamon stick

2-4 green cardamoms

4-6 cloves

3 tablespoons finely chopped mint leaves

finely chopped coriander for garnishing






Start off by heating up oil in a pan on medium heat.

Add all the dried spices i-e cardamoms, pepper corns, cinnamon stick and cloves. Fry until fragrant.



Add sliced onions and fry them until translucent.



Add mutton chops and ginger garlic paste. Mix it well and cook until the meat changes it's color like people do.



Add sliced green chilies and simmer on low heat for about 20 minutes while  uncovering and stirring occasionally or else the onions will burn.



Take off the lid and add turmeric, red chili powder, salt and lemon juice. Mix it well.




Turn the heat to medium again and add tomato puree or chopped tomatoes, yogurt and mint leaves.

Cover and simmer for 20 minutes again.




Take off the lid and turn the heat to high. Give the chops a nice stir and turn the heat off. Masala Mutton Chops is ready to be garnished and served.


Have it with naan, some yogurt and salad. It will definitely make your lousy day.
